This is my carrot cake I baked yesterday following this recipe step by step. It came out soft and tasting very nice. The sweet aroma of cinnamon and carrots makes you keep wanting more. I did not ice it but still it tastes very good. I did not have walnuts instead put a few raisins and it remains the best carrot cake I have ever baked and tasted.

Hmmmm!! Can smell it in my mind. I also use this recipe, and add raisins and believe it, some crushed drained pineapple! Oh so good!!
